I am going to visit London next week for one week and was wondering if there are any good hobby stores within the six travel zones. I use six for I have a travel pass that lets me travel for free in those zones for a week which is sold to us foreigners.
I do have a schedule to see many sites but if my wife and granddaughter run out of steam I will try to go to some hobby stores.

I am not sure about hobby shops in London, But this transport museum is good if you have a spare few hours.
Not so much about boats.

I haven't been there for years but W H Hobby of Hobby's catalogue (Not Hobbies catalogue) fame is in West Norwood.

Whatever else you do, don't miss visiting the National Maritime Museum. Despite their scrapping of the Reliant, there is still plenty to see. You will need to set aside a whole day for Greenwich if you intend to include the Cutty Sark and the Chronometers at the observatory as well.

Greenwich and the Travel Museum are in my London Pass so after I get off the London Eye I get a boat ride to Greenwich. I get a free ride on the rails back to my Hotel. Day later to the museum and other stops.
